Bō sushi (bōzushi) is a traditional type of Japanese sushi. This culinary term is made up of , which means “stick”, and sushi, which refers to the rice marinated in vinegar in combination with various ingredients, mainly seafood. In contrast to the more well-known types of sushi such as nigiri or maki, bō sushi is characterized by its cylindrical shape and the preparation method in which the sushi rice and ingredients are pressed into a long, stick-like shape. 

When preparing bō sushi, sushi rice is usually layered with ingredients such as fish, particularly mackerel or eel in certain regions, and then wrapped in a bamboo leaf or sometimes seaweed. This bundle is then pressed to create a compact, cylindrical shape and then cut into portions.
