Kaiten Sushi, also known as “Conveyor Belt Sushi”, is a type of sushi restaurant where the dishes are presented on a rotating conveyor belt. This system was introduced in Japan in the 1950s and has since spread worldwide. The concept allows guests to serve themselves by taking the desired sushi plates directly from the conveyor belt that runs past their tables.
A typical kaiten sushi restaurant consists of a central kitchen around which the conveyor belt runs. The chefs continuously prepare different types of sushi, which are presented on color-coded plates. Each color represents a different price, making it easier for guests to control their costs. At the end of the meal, the number and color of the plates are counted to determine the total bill.
