Nimono or nimono dane means “cooked ingredients” or “stew” in Japanese cuisine. It is a method of preparation in which various ingredients such as vegetables, meat, fish, or tofu are cooked in a liquid that often, but not exclusively, consists of water, dashi, soy sauce and mirin. The methods range from cooking in plenty of liquid for a long time (nikomi 煮込み) to cooking in little liquid, where the liquid is completely absorbed or reduced. Examples of nimono dane in sushi are steamed shiitake mushrooms, kanpyo and certain types of fish.
